The general rule is that the flavor of the sherry will gradually change and fade. How long does it take until sherry tastes bad or stale? Some types of sherry, such as Fino and Manzanilla, are aged in barrels in a different way than others [SN].
And that makes them more unstable. These types are best if you drink them fresh, ideally when you get home with the bottle. Other types are much more stable, and you can easily store them unopened even for a few years.
It can sit in the fridge for a month or two, or sometimes even longer [SN]. When in doubt, check the best-by or best-before date on the label. It should be a reasonably good indicator of whether that sherry is one of the long lasting ones or not. Another unpleasant side effect of sherry that has been opened for too long is a cork that has dried out and crumbled into the bottle.
Store in the refrigerator up to 2 months. However, the more it sits after opening, the closer it gets to vinegar. All Sherry should be stored upright in a cool, dark place. Once opened, store light sherries in the refrigerator to prolong their life up to around two weeks. Unopened Amontillados can keep for two to three years while Olorosos, sweet, and cream sherries can all be stored for many years.
A bottle of Port has the advantage over a regular wine of having a longer open bottle shelf life. Depending on the style it can be kept for 4 to 12 weeks once opened. How long does unopened sherry last? Always try to store sherry bottles in a cool, dark place, with no sudden temperature fluctuations, in an upright position to minimize the contact area with the air inside the bottle and with the cork. Manzanilla and Fino have spent their whole life under a layer of flor, protected from oxygen.
Bottling will filter out the flor and slightly expose the wine to air, which causes the wine to change. It is true that biologically aged sherry is relatively unstable , however commercial bottling techniques have improved in recent times, and this problem is not as big as it used to be. Their delicate character and the specific flor aromas will fade. Again, these sherries will probably taste just fine, but they will lack some of the finesse and brightness of a newer bottle.

Manzanilla Pasada or more mature Finos definitely longer. Once your bottle is open, deterioration will go faster.
The best advice is to keep it in the fridge at all times, and to properly close it again after each serve. This way a commercial Fino or Manzanilla will stay fresh for a few days up to a week in my experience, similar to a regular white wine actually. Older examples like Manzanilla Pasada or en rama bottlings will often improve slightly after opening, and they deteriorate more slowly in my experience. Again, changes will eventually occur, but for authentic sherry I actually find most of the changes interesting to witness.
Say you keep an open bottle of Fino at room temperature for a couple of weeks.
